"Kodi Logan style" pages and RECIPES!!!!!

LOL...This is a simple page, but at least it's done! 30 minute page! That is what Kodi Logan style means. I've been quite impressed with how fast she gets pages finished here lately. This page is one of my dad and his soon-to-be wife. They dated back in high school/college days and then lost touch for 40 years!!!!!!!!!! He looked her up recently and they picked up where they left off. Wouldn't that be weird to get a random phone call from someone you hadn't heard from in 40 years, but used to love or really care about? They will be getting married this fall in Eureka Springs.

I would like to start some kind of recipe exchange with anyone that reads my blog, even those of you that breeze in like a phantom and don't make a comment. I'm not talking tacos...we have that every week or so, but things that require minimal effort, but still require a recipe until you memorize it. I would like some dishes that are staple recipes of others, but maybe I have never made them. Maybe we should make a list of the recipe name or quick phrase description. Then, if anyone wants the recipe, they can comment and ask! I will start by listing the 5 dishes we make the most often that actually have a recipe to them.

Chicken and Cornbread Stuffing (casserole style)
Delightful Chicken (includes poppy seed, dill, and a cracker topping)
Taco Soup
Mexican Lasagna
Baked Spaghetti

  1. This is one of Brian's absolute favorites, courtesy of Pampered Chef: Beef and Broccoli Calzones
    1 lb ground beef
    1 (10 oz) pkg frzn chopped brocc - thaw and drain (I use fresh)
    1 c. mozzarell chz
    1/2 c. chopped onion
    1/2 c. sour cream (I use light)
    1/4 tsp. salt
    1/4 tsp. pepper (I use more)
    2 (8-ct.) cans crescent rolls, divided
    1 egg, beaten

    375 degree oven. Brown burger, drain. Stir in brocc, chz, onion, sour crm, s&p. Simmer 10 min. Seperate dough into 2 long rectangles on ungreased or lightly greased pan. Overlap edges on long side by 1/2". Seal edges and perforations. Spoon filling into the center of one rectangle, and fold the other side on top of the filling. Seal all edges. Should look like a big hot pocket. Brush w/ beaten egg. Repeat with more filling and other can of dough. Bake 18-22 min or till golden. Dough can get sticky if you fool with it too much, but you get used to it, and this recipe is worth it! I sometimes season it a little more w/ garlic powder etc. YUM!!

Hey, I'm glad to know that a "Kodi Logan" style exists! :) Also glad you were able to start whippin out some pages! :)That's cool that your dad is remarrying and everyone is okay with that. i don't think it will ever get to that point in my family! :) The only recipe I really use to make meals is for my 3 cheese enchilladas. They have cream cheese in them...really, really yummy. if you want the recipe just let me know. they are also super, super easy and fast! that's what i like best.

  5. You're welcome! You should post one on here too. I think that you know most of Brian's food vetoes, so work around them if you can. I know, it's tough, but try to anyway.

  12. I have a recipe called "Italian Steak" that rocks! I havent made it in a long time, so I better wait to post it until I have the recipe in front of me:) It's not really an "italian" dish per se, but it uses Italian bread crumbs and Parmesean Cheese. My mom made it when I was a kid.....it's one of my Dad's favorites!

  14. Here is my chicken enchilada recipe:
    3-4 chicken breasts, boiled and chopped
    2 cans of cream of chicken soup
    1 can of cream of celery soup
    1 can chopped green chilis
    shredded cheddar cheese
    flour tortillas

    Mix chicken, soups, and chilis together. Add cheese if you would like. Spoon mixture into flour tortillas, roll, and place in a greased pan. Pour remaining mixture over the top. Sprinkle with desired amount of cheese. Bake at 350 degrees until mixture is starting to boil. Serve with cheese, sour cream, or any other toppings you like.

  15. Amy, I made the chicken enchiladas and it made enough for an small army! We have hadthree meals from that one recipe! They were yummy. We added guacamole and salsa. Thanks again!
